EGGLESS CHEESE CAKE

shes my spanish friend..
FOR THE BASE
200 grams of marie biscuits, crushed and mixed with 80 grams of butter..spoon this mixture into a spring form dish or even a pie dish will do… press it with the back of the spoon so it sets well and refrigerate it while you proceed with the filling
FOR THE FILLING
250 grams cream cheese…we used KRAFT PHILADELPHIA CHEESE, kept at room temperature
250 grams of whipping cream
100 grams or more of fine sugar (to taste)
a little essence of your choice
jam or berries or pineapple to decorate
mix the cream cheese well and then add the sugar and the whipping cream slowly so its all well mixed. add the essence of your choice if u like…if not u dont have to…
pour it over the hardened biscuit crust and refrigerate. you can decorate with cut berries of your choice, or canned pineapple or even the jam of your choice.

Patatas Bravas

PATATAS BRAVAS!!!!!!!!!!!
who has visited SPAIN and not tried this at the local food eateries???? if u havent had PATATAS BRAVAS u havent been to SPAIN!!! with a glass of chilled beer, or some SANGRIA……this is the ULTIMATE TAPA… i will teach u how to make it
for this u will need par boiled potatoes
cube the potatoes and par boil them in salted water
drain well and then deep fry them till crispy
they shd be crispy on the outside and soft inside!!
SAUCES
the white sauce is ALIOLI thats a garlic mayonnaise
just add some grated garlic to your mayonnaise
the RED SAUCE is brava sauce…u mite not get it in your city…..just use a chilli sauce thats not too sweet… wat i wud do is combine some tomato puree with some tabasco and some paprika powder….
PUT IT ON TOP OF YOUR HOT POTATOES!!!!!!

Pomegranet Salad With Marinated Tomatoes

A colorful nutritious salad that combines fruit and vegetables
hope you enjoy this as much as i did.
The marinated tomatoes can be made a day in advance…tastes better
MARINATE TOMATOES
2-3 firm red tomatoes
1 clove of garlic minced fine
salt
olive oil
cut the tomatoes into 8 pieces if big, if not then 4 and marinate with the garlic, salt and olive oil .
NOW FOR THE SALAD
1 cucumber cut into rounds
seeds of 1 pomegranet
canned white asparagus, cut
1 avocado, cut and sprinkle with salt and lime so it doesnt change color

METHOD
in a lovely platter, arrange the avocado, the cucumber, the marinated tomatoes(drain the marinade n keep aside . it has to be used for the dressing)
add the asparagus, and sprinkle the pomegranet seeds all over.
FOR THE DRESSING
mix the liquid of the tomato marinade with more olive oil, salt and vinegar of your choice.
HERE U HAVE THE MOST AMAZING SALAD
Pomegranets can be substituted with seedless green grapes. ENJOY

Eggless Choco Cheesecake

This is soo simple to make…the recipe was sent to me by my niece who used CADBURY DAIRY SHOTS which are available in India but you can just use 100 grams of milk chocolate cut into pieces
do try this simple awesome EGGLESS DESSERT

For the crust…15 bourbon biscuits blended in the mixi…and pressed to the bottom of dish…freeze for ten min

For the cheese cake…200 gms fresh cream, two heaped tablespoons good quality cream cheese, little milk (hot), and one box dairymilk shots(100 grams milk chocolate chopped)

Empty the dairy milk shots in a steel bowl…add few tablespoons of hot milk…only enough to start melting it. Stir and melt…then put it on lowest flame, add the cream cheese and keep stirring continuously…add the cream and 4 tbsp sugar…keep stirring…once its creamy and no lumps, pour on crust.

Freeze for an hour and then put in fridge. Serve chillllled

Spring Onion Mushroom Cakes

This is such a popular starter in many chinese restaurants . these crispy cakes are served hot with a dipping sauce

SPRING ONION MUSHROOM CAKES
an excellent vegetarian starter for your parties
for the dough
2 cups of white flour                                    
salt and white pepper
5 tablespoons of cooking oil
water as needed to make the dough

FOR THE FILLING
spring onions chopped fine
mushrooms of your choice. chopped fine, boiled , and drained totally so they r dry
a tiny sprinkle of salt
METHOD
make balls out of the dough
roll one ball into a thin round and place a bit of the filling in a line. roll it up and seal the edges well and bring both edges together to make a doughnut shape. deep fry in hot oil till golden brown and crispy.
serve with any kind of sauce…. cut them in halves like i have done in the pic….
