EGGLESS MILK CAKE

 

 

Its Diwali and my recipe is a bit late but i have been so busy! My daughter does not like mithais (indian traditional sweetmeats) so i made this for her…a simple recipe ….with a “twist”.
INGREDIENTS:
150 grams of softened butter
1 cup of sugar (250 grams)
1.5 cups of flour (use the same cup as you did to measure the sugar)
1 cup of whole fat milk powder
1 teaspoon of vanilla essence or any essence of your choice
1 tablespoon of lemon juice
a pinch of salt
1 teaspoon of baking soda
1 teaspoon of baking powder
1 cup of whole milk
food coloring to make it decorative
METHOD:
Preheat the oven to 200 and grease a cake pan
Cream the butter till fluffy and then add the sugar and cream it again till its nice and fluffy.
Mix the flour with the milk powder and sift it.
Add it slowly to the butter/sugar mixture alternating with the milk.
Add the salt, lemon juice and the flavoring.
Lastly add the baking soda and baking powder and mix well.
Divide the batter equally into 3 parts and color each part with food color
Pour into the cake pan in different layers or if using a square pan pour each colored batter into a line and bake for about 30-40 minutes till done.
Cut and serve and bite into a lovely cake with a different flavor

      Ravneet…its a lovely cake…a cross between a cake and a mithai…you can flavor it as you wish… this was my diwali mithai 🙂

      Ravneet…not a good idea, its the mixture of butter and milk powder that makes this cake soo special..and its not a lot of butter for a cake this size…trust me…happy diwali sweety 🙂

    1 teaspoon each was too much? i made it the same way as i wrote it and the original recipe had 175 gms of butter…i put 150… im soo sorry 😦

    • no no, u don’t have to be sorry… must’ve been the quality of bk pwdr & soda… it varies from brand to brand.. has happened with me before with tried & tested recipes

  6. guess what, a friend of mine was here just now, and I offered him the cake, must’ve been 7-8 slices in the plate.. he loved it so much, had them ALL!!! He didn’t care that the cake went flat! Hahaha
