So much as been said about the goodness of beans… i feel we should include them in our diet as a regular feature. In India we have many types of beans and make so many recipes out of them. Soya beans are so good for us and apart from cooking them in a sauce or curry as the English would say i like to just boil and eat them with a pinch of salt and pepper. Makes an excellent snack instead of crisps. Today i am sharing with you my recipe of soya bean salad. These are yellow soya beans available in most supermarkets …not to be confused with the green mung beans. If you would like to buy some soya beans do contact me.
These beans need to be soaked for at least 4-6 hours and then boiled till soft.
Once they are boiled you can use them in whatever way you wish. I also freeze them once they are boiled so i dont have to go through this process repeatedly.
Soybean is a legume, it comes in different colours like green, yellow, brown and black. In the modern world, major producers of the soy are United States, Brazil, Argentina, China and India.
INGREDIENTS:
1 cup of boiled soya beans
Chopped vegetables such as :
onions
tomatoes
cucumbers
avocado
bell peppers (capsiums)
radish
pineapple/apples/kiwi
chopped coriander or parsley leaves
DRESSING:
a splash of extra virgin pure spanish olive oil
a splash of lemon juice
salt to taste
Mix the beans with all the vegetables of your choice. You can also omit some if you dont like it. I used pineapple in this recipe and it turned out amazing. Mix the ingredients for the dressing and toss into the salad. Let it rest in the refrigerator for an hour for all the flavors to blend. I did not add any oil….But it would be nice if you did 🙂
